Baked Ricotta Appetizer
Guys – I am aware that I claim to love a lot of different things, namely foods. But when I say that I love ricotta cheese, I mean that I really – like really – LOVE ricotta cheese. I eat lasagna because I love ricotta. Stuffed Shells. Manicotti. Its true, these foods are delicious – but they are delicious because of the baked ricotta. This Baked Ricotta Appetizer is everything you love about ricotta – in a pan, on its own, no gimics. Just straight up DELICIOUSNESS.
I mean come on – how good does that look?

Creamy, cheesy ricotta, loaded with oregano and spiked with red pepper flakes. This Baked Ricotta Appetizer is like heaven in a casserole dish.

Not going to lie, I just ate mine with a spoon. I couldn’t stop myself! It was SO GOOD!

Then I used the leftovers to top my pasta for lunch the next day… and pizza for the day after that! This Baked Ricotta Appetizer is another delicious, easy option that everyone will love!

- 1 lb ricotta
- 2 large eggs beaten
- 1 1/4 cup shredded Parmesan cheese separated
- 1/2 cup shredded mozzarella cheese or Italian blended cheese
- 1-2 cloves garlic minced
- 1 tsp fresh oregano leaves finely minced (1/2 tsp dried)
- 1/4 tsp red pepper flakes
- 1/2 tsp salt
- 1/2 tsp black pepper ground
- drizzle olive oil about 1-2 tbsp
- fresh herbs for garnish
- pita, crackers, or sliced baguette for dipping

Preheat oven to 375F. Lightly grease a small (at least 2-cup capacity) oven-safe baking dish, set aside.

In a medium sized bowl, combine ricotta, eggs, and 1 cup Parmesan – stir to combine.

Add garlic, fresh parsley, red pepper lakes, salt, and black pepper – stir to combine.

Pour cheese mixture into greased dish, then top with additional cheese and a drizzle of olive oil.

Bake at 375F for 20-25 minutes, or until top of cheese begins to brown. Remove from oven and allow to cool slightly. Top with fresh herbs and serve with pita, crackers, or sliced baguette!
Storage: Best enjoyed immediately. To store, refrigerate in an airtight container for 3-4 days.
