Cranberry, Apple, and Almond Broccoli Slaw (V)
Trader Joe’s – what an incredible place. Here in Columbus, we don’t have a Trade Joe’s downtown so I always forget exactly how much I LOVE going there. This past weekend, I happened to be over at Easton Town Center (our local mall) where there IS a Trader Joe’s and of course I had to stop. That’s where I found the inspiration for this amazing Cranberry, Apple, and Almond Broccoli Slaw.
Perusing through the produce section, I love finding fun pre-prepared veggies that are just READY to be eaten. Riced cauliflower, sweet potato ribbons, butternut squash zig zags – Trader Joe’s makes traditionally intimidating, healthy ingredients easy by pre-washing and pre-cutting so the food is ready to go when you buy it in the store.
I came across a bag of fresh broccoli slaw which I thought hm – that could be good. It wasn’t until I saw the sign below which stated “add cranberries, walnuts, sliced apples & your favorite dressing!” Boom, I was sold.
So I cannot really take FULL credit for this recipe – Trader Joe’s offered the guidance and inspiration.
Needless to say, if you’d prefer to completely ignore my recipe below and follow Joe’s recipe exactly! Use walnuts instead of almonds and your favorite dressing rather than a homemade red wine vinaigrette. You do you!
I love this Broccoli Slaw because it is crisp, light and refreshing. Fresh, juicy apples, sweet, bright cranberries, and crunchy almonds fill this salad with incredible flavor and texture. The red wine vinegar is tart but balanced by a sweet touch of honey.
I cannot WAIT to make this side at our next barbecue or outdoor gathering – I think it will taste just PERFECT with veggies and a burger from the grill (hamburger or veggie burger of course).
Not a fan of red wine vinegar? No problem! Use whatever type of vinegar you’d like!
Crisp, light and refreshing - this Cranberry, Apple, and Almond Broccoli Slaw is the perfect side for a BBQ, picnic, or weeknight meal. Fresh, juicy apples, sweet, bright cranberries, and crunchy almonds fill this salad with flavor and incredible texture. Tart red wine vinegar is balanced by a sweet touch of honey.
- 1 bag broccoli slaw
- 1/4 cup almonds chopped or slivered
- 1/4 cup dried cranberries
- 1 apple diced
- 1/4 cup extra virgin olive oil
- 1/3 cup red wine vinegar
- 2 tsp dijon mustard
- 1 tbsp honey agave nectar for vegan alternative
In a large bowl, combine broccoli slaw, almonds, dried cranberries, and apple. Set aside.
In a small bowl, combine olive oil, red wine vinegar, dijon mustard, and honey. Use a small fork or whisk to mix all ingredients together.
Once oil and vinegar are no longer completely separated in two layers, pour dressing over slaw. Use large tongs or forks to toss slaw thoroughly - so slaw is fully coated with dressing.
Allow slaw to rest for an additional 10 minutes - toss before serving.
Storage: Refrigerate in an airtight container for 2-3 days.
