Buffalo Chicken Dip
I still remember the first time I tried Buffalo Chicken Dip – I thought, what a strange concept! I liked chicken wings and buffalo chicken, but I wasn’t necessarily a LOVER of either. Small amounts of buffalo sauce were definitely tasty – but a dip? Chicken soaked in buffalo? Also – chicken in a dip? How bizarre.
I call this time of my life…

Okay so perhaps I am being a tad dramatic. But I seriously LOVEEEEEEEEEE Buffalo Chicken Dip. It is rich, creamy, spicy, cheesy, delicious, and perfect in every way…
Except for its caloric content – EEK!
But let’s not go there.
Why Buffalo Chicken Dip is the Best…
Seriously – the combination of creamy ranch or blue cheese dressing with buffalo is UNBEATABLE! There is a reason people love to dip their buffalo wings in ranch or blue cheese dressing – because it tastes AMAZE-BALLS!
Unlike MOST party appetizers that are greasy and unsubstantial, Buffalo Chicken Dip is – you guessed it – packed with CHICKEN! And therefore, packed with protein – and good protein! Yes, of course, its also packed with cream cheese – but at least we have some good stuff in there, right?
Creamy, cheesy, warm, gooey… I am drooling everywhere.
Need I say more?
Okay okay okay – so OBVIOUSLY, anything containing, cream cheese and cream dressing AND cheese can’t be incredibly good for your arteries…
It’s all about balance people!
Maybe don’t eat an entire dish of Buffalo Chicken Dip by yourself in front of the TV while binge watching the newest season of The Crown. But life is short! Treat yourself and have a little something delicious every now and again.
Buffalo Chicken Dip is possibly the most incredible appetizer and/or dip that was EVER CREATED! It is rich, creamy, spicy, cheesy, delicious and packed with chicken! It is so life changing, I now separate my life into two segments - BBCD and ABCD. Before Buffalo Chicken Dip and After Buffalo Chicken Dip.
- 2 cups cooked chicken shredded
- 2 8-ounce blocks cream cheese
- 1/2 cup buffalo sauce
- 2/3 cup ranch or blue cheese dressing
- 1 1/2 cups shredded mozzarella cheese separated
Preheat oven to 350F.
Combine shredded chicken, cream cheese, buffalo sauce, ranch, and 1 cup mozzarella cheese in a large bowl. Stir to fully combine.
Spoon ingredients into a shallow baking dish (1-quart should suffice). Sprinkle with remaining mozzarella cheese.
Bake at 350F for 25-30 minutes, or until dip is bubbling and cheese has begun to brown. Serve warm with bread, chips, or pita.
Storage: Refrigerate in an airtight container for up to one week.
For Hot Dip: Use 3/4 cup of buffalo sauce.
For Extra-Hot Dip: Use 1 cup buffalo and 1/3 cup ranch/blue cheese.
To Cook Chicken: Cut two chicken breasts in half length-wise. Salt and pepper each side, then bake at 350F for 15 minutes - flipping chicken half way through. Once slightly cooled, use a fork to shred.
Love Blue Cheese?: Crumble 1/2 cup blue cheese (instead of mozzarella) on top of dip before baking.
