Are you a fan of Potato Leek soup? If so, you are going to LOVE this Cauliflower Potato and Leek Soup. I guarantee it!
As long as I can remember, one of my favorite dishes has always been my dad’s Potato Leek soup. That’s right folks – not just ANY Potato Leek soup. My favorite has to be made by my dad. It is warm, creamy, full of potato chunks, and rich with flavor. No other Potato Leek soup has every matched up!
Whenever I come home to visit for any period of time, he knows that Potato Leek soup has got to be put on the menu. In fact, while I was home for Thanksgiving, he made it the day before I left to come back to Columbus! Only problem was I was too full on turkey on stuffing to eat it! Have no fear – I froze a Tupperware and put it in my suitcase – who knew, Potato Leek soup travels well!
I seriously could eat his soup and day of the year, no matter the temperature outside – but as it starts to get colder (like RIGHT NOW) my cravings go into hyper drive. I crave the warmth – the hearty potato – the flavorful seasoning – the copious amounts of cheese and bacon that I load on top… wait what? Who said that? 🙂
Anyway, I have never tried to make my dad’s Potato Leek soup because surely it will not compare! But, who said we can’t put a fun twist on a classic favorite? No one! That’s who!
This time of year is SO challenging to stay on track health-wise. Between Thanksgiving, friendsgiving, football season, Chanukah, Christmas, work events, family events, friend events – so many events! It literally feels impossible! The inevitable “I’ll start my diet AFTER New Years…” begins to play on replay in your mind.
But what if you could enjoy something warm, hearty, comforting AND delicious without the guilt?
Here we go – putting a healthy twist on the classic favorite, Potato Leek Soup, by adding another healthy favorite, cauliflower!
Cauliflower Potato and Leek Soup
I LOVE THIS SOUP! Of course, it is not as good as dad’s – duh. It will never be. BUT, it is pretty damn good if I do say so myself.
This cauliflower soup is quick and easy to make – not to mention, rich and full of flavor! All the ingredients are easily found in winter – so it is perfect for warming you up on a cold winters’ day! Oh and the best part? It’s healthier than Potato Leek soup!

- 2 tbsp olive oil
- 2 tbsp garlic minced
- 2 cups leeks chopped
- 3 cups cauliflower florets
- 2 cups potato, russet or yukon peeled and diced
- 1 tsp salt
- 1 tsp pepper
- 2 cups vegetable broth
- 1 cup milk or cream Substitute with non-dairy alternative to make vegan
- shredded cheddar cheese optional
- turkey bacon bits optional
- chives optional
- croutons or crackers optional
In a large pot, warm olive oil over medium heat. Add garlic and leeks then cook for 2-3 minutes.
Add florets and potatoes, then sprinkle all ingredients with salt and pepper. Allow to cook for an additional 5 minutes, stirring occasionally.
Pour vegetable broth over ingredients in pot then bring to a boil. Lower heat and simmer for approximately 20 minutes (or until vegetables are tender).
Remove from heat, allow to cool slightly. Use a blender or an immersion blender to puree vegetables. Add milk and stir to combine. (For a thicker soup only add about 1/2 cup milk - for a thinner soup, add more milk until desired texture has been achieved).
Heat soup to desired temperature, serve hot with cheese, bacon bits, chives, and or croutons/crackers! Enjoy!
Storage: Refrigerate in an airtight container for up to one week. Freeze in an airtight container for 2-3 months.
