This Chicken Tortilla Gumbo was a completely delicious surprise! When I first made it, I never thought it would be something that I would post here – but we loved it so much, I just had to share! The birth of this recipe is a funny story actually…
A few weeks back Jake and I went to the grocery store together. Now you might not think this is a big deal, but Jake NEVER comes to the grocery store with me! So I was excited. It was a cold wintery Sunday and he had suggested that I make Chicken Tortilla Soup for dinner – great!
Problem was, we got to the grocery store and they were COMPLETELY out of fresh chicken! Like the entire chicken section was empty AND the butcher had no more… I was shocked. And annoyed. The one time Jake gets excited about me making something, and I can’t even make it!
So we are walking around the store, looking at alternative meats to use – turkey breast, ground turkey, beef – when out of nowhere, Jake comes up with this brilliant idea. What about chicken sausage? You know, like a gumbo?
At first I was skeptical – I have never made gumbo. I don’t know all the seasonings that go into a gumbo, and I wasn’t ready to invest in a new spice rack to make it happen.
We decided that I should try to just use my normal Chicken Tortilla seasonings – cumin, chili powder, salt, pepper – and see how it worked out!
We bought black beans, corn, chicken sausage and rice – along with all the usual Chicken Tortilla Soup fixings. My expectations were not SUPER high. Would the rice cook all the way through? Would the flavor combination of chicken sausage and tomato and seasoning be weird?
Well, guess what?!? IT WAS DELICIOUS! We both were like OMG! Do we like this better than traditional Chicken Tortilla Soup?? It was amazing – spicy, filling, full of flavor – I topped mine with cheese, sour cream, and some tortilla chips – it was just like a bowl full of joy!
And of course, the best part of making soup is that you’ve got tons of leftovers to enjoy all week! Try it for yourself! I’m sure you’ll love it too 🙂
Tomato broth loaded with rice, chicken sausage and beans! This spicy Chicken Tortilla Gumbo is the perfect something to warm you up this winter
- 2 tbsp olive oil
- 1/2 sweet onion chopped
- 1 package spicy Italian chicken sausages 4-5 links
- 2/3 cup rice white or brown
- 32 ounces chicken broth
- 1 can diced tomatoe
- 1 1/2 tsp chili powder
- 1 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 1 1/2 tbsp tomato paste
- 1 can black beans
- 1 can corn
- 1 tsp salt
- 1/2 tsp black pepper
- 2-4 tbsp fresh lime juice to taste
In a large pot, heat oil over medium heat. Add chopped onions and cook for 2-3 minutes until softened – stir occasionally.
Slice chicken sausage into coin-sized slices. Add to pot – cook for 4-5 minutes, stirring occasionally until chicken sausage begins to brown on either side. Remove chicken sausage and onions from pan, set aside.
Add rice, broth, and diced tomatoes to pot. Season with chili powder, cumin, cayenne, and tomato paste. Stir to combine.
Bring soup to a boil over high heat, then reduce to a simmer. Add black beans, corn, chicken sausage, onions, salt and pepper, stir to combine. Cover slightly and simmer for ~25-30 minutes.
Add fresh lime juice before serving (season with additional salt, pepper, and lime juice as desired).
Enjoy with cheese, avocado, sour cream, green onions, red onions, fresh tomatoes, tortilla chips, quesadillas or whatever else your taste buds desire!
Storage: Once completely cool, refrigerate in an airtight container for up to one week. Freeze for 2-3 weeks.
