What are your favorite vegetables for roasting? I personally love brussel sprouts, eggplant, and perhaps most of all, asparagus. Asparagus goes well with everything, pasta, rice, any protein, its all good.

The great thing about roasting vegetables is that its easy, and requires few ingredients. With just a little olive oil, salt and pepper, you can roast any vegetable and most likely the result will be delicious. The bad thing about roasting vegetables is that its easy to fall in the habit of roasting the same way… every. single. time. And that can get boring. The good news, is that there are EASY ways to AMP up the flavor in the veggie department – so let’s leave those boring veggies behind, starting with this fab recipe! This dish is great on its own as a side dish, or as a pre-made addition to any other dish (such as a pasta or an omelet). I like to have some pre-made veggies in the fridge so that I can easily through together a fresh tasting dish in half the time. Like my  Red Pepper, Asparagus, and Mushroom Pesto Pasta. This dish easy easy with raw veggies, but even EASIER with cooked! Got some Garlic Parmesan Roasted Asparagus pre-made in the fridge? Some sauteed red pepper and mushrooms? Simply make some fresh pasta of your choosing, toss in your veggies, and pesto – dinner is served!

They key to this recipe is fresh garlic and fresh Parmesan. Of course, you can use pre-minced garlic or “powdered” Parmesan, but using fresh garlic and freshly grated Parmesan adds so much flavor and texture.

What does that mean? Everyone has a different roasted veggie texture preference. Some like their veggies still firm. Others, as weird as it sounds, prefer mush! I know that sounds crazy but I actually love my eggplant over roasted – the mushier the better. Roasted Asparagus on the other hand, I like somewhere in better firm and mush – crisp around the edges yet soft in the center.

Ingredients
  • 1 bunch asparagus rinsed and trimmed
  • 1-2 tbsp olive oil
  • 2-3 cloves minced garlic cloves 2 large or 3 small
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded parmesan cheese
Instructions
  1. Preheat oven to 425F. Lightly grease baking sheet, or cover in aluminum foil, set aside.

  2. In a small bowl, combine oil, garlic, salt, and pepper.

  3. Arrange asparagus spears on baking sheet - use a pastry brush to brush on oil/garlic mixture.

  4. Bake at 425F for 15 minutes. Remove asparagus from oven - flip asparagus spears then sprinkle with parmesan. Bake at 425F for an additional 5-7 minutes, or until cheese begins to brown. Serve immediately.

Recipe Notes

Storage: Refrigerate in an airtight container for 3-4 days. Best enjoyed right away.
