Healthy Banana Bran Muffins

Is it weird that I love bran cereal? I always have. Sure – some people think it tastes like cardboard. But I LOVE it! With a little almond milk – yum!
So what about Bran muffins?

Also delish. BUT not all bran muffins are created equal.

Some are packed with sugar but disguised as a healthy option.

Others are low fat and low sugar, but taste like… cardboard.

Finding a balance between the healthy and unhealthy, full flavor and no flavor – that is the key!

When I was a kid (yes I was the weirdo who loved bran muffins as a kid), I used to always make the recipe on the All-Bran cereal box. And don’t get me wrong, those muffins taste GREAT! But there is quite a bit of oil and sugar in each serving.

As I got older, I attempted to remove all oil from the muffins in order to make them lower-fat. I subbed apple sauce for oil and to my chagrin discovered this was also a terrible choice. The muffins were too wet. Don’t get me wrong, I still ate them. And made them again, and ate them again – but my family thought they were disgusting.

So now – I am trying to go back and find the ultimate bran recipe that balances flavor and health. How to do this? Let’s start with banana!

Using banana will provide moisture in place of the oil. Using honey instead of granulated sugar provides sweetness (the mashed banana will also provide additional sweetness). And lastly, grinding up some of the bran cereal acts as a flour substitute.

There are many additional variations you could make – but in all my testing, I found this combination of ingredients to satisfy the best.

Ingredients
  • 1 cup bran cereal
  • 2 eggs
  • 1 cup mashed bananas 2 medium-size
  • 1 tbsp coconut oil melted, then cooled
  • 1/2 cup almond milk unsweetened
  • 1/4 cup honey
  • 1/2 cup almond flour
  • 2 1/2 cups bran cereal ground
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
Instructions
  1. Preheat oven to 350F. Lightly grease a 12-muffin pan, set aside.

  2. In a large bowl combine, cereal, eggs, banana, almond milk and honey – stir to combine. Allow to soak at least 3-4 minutes before adding dry ingredients.

  3. In a small bowl, combine remaining ingredients.

  4. Once wet ingredients have soaked, add dry ingredients to wet, stir to combine.

  5. Spoon batter evenly into greased muffin pan (each muffin cup should be about 2/3 full). Bake at 350F for 22 minutes, or until tops begin to brown and an inserted wooden toothpick comes out clean.

  6. Allow muffins to cool completely in pan – use a knife to remove carefully. Serve with peanut butter, ghee, butter or cream cheese. 

Recipe Notes

Storage: Line a plastic container with paper towels, then place muffins inside (this will help to absorb excess moisture from the muffins). Keep container slightly ajar to allow airflow.
