Do you have any non-breakfast eaters in your house?? Jake does not eat breakfast most of the time and I simply don’t understand. Meals are my favorite part of the day. I wake up, YAY  BREAKFAST! It’s 12PM, YAY LUNCH! It’s 5PM – TG IT’S DINNER!

I have found the easiest way to force breakfast onto a non-breakfast person is by providing an easy, tasty go option. The problem with easy, tasty options are that they usually aren’t very good for you. Sugary cereals, protein-less bars, calorically empty (pop) tarts. The options are not in your favor.

That where these Honey Peanut Oat Bars come in.

SO TASTY – the combination of peanut butter and honey is da bomb diggity.

And best of all – they are PERFECT for grabbing on the go!

One batch makes around 12 bars. Of course you can cut this recipe in half, or double it! Whatever you please.

You can cut the bars into long rectangles, like I have pictured here. Or into squares for a smaller snack!

Like a lot of the recipes that I post, this one is versatile!

You can add any combination of nuts, seeds, chocolate or dried fruit. Basically anything that tastes good with peanut butter, which is… everything.

In the batch pictured, I drizzled my bars with a bit of semi-sweet chocolate and then sprinkled them with sea salt!

Ingredients
  • 1 cup peanut butter
  • 1/2 cup honey
  • 3 cups quick-cooking oats
  • 1/2 cup almonds optional, add two tbsp extra peanut butter
  • 2 tbsp chocolate chips melted, optional
Instructions
  1. Melt peanut butter and honey on stove over very low heat until smooth - stir until fully combined. 

  2. Stir in oats and almonds until fully combined. Press oats into a wax paper lined 8x8 pyrex pan - drizzle with melted chocolate (if desired), then refrigerate until set (about an hour). Slice into bars and serve.

Recipe Notes

Storage: Refrigerate in an airtight container for up to one week, or freeze for 2-3 weeks.
