A few weeks back, I posted a new recipe for my latest Healthy Tomato Bisque – have you all tried it yet? If not, now is the time! Because what goes with Tomato Bisque? GRILLED CHEESE! Heck yes! Everyone loves grilled cheese. Unless you are a vegan and do not eat cheese – or you are lactose intolerant and can’t eat cheese… in which case I will give you a pass. Otherwise, you might be a sociopath. Just kidding. But seriously – CHEESE IS DELICIOUS!

There are a million and one ways to make a grilled cheese. And honestly, if you are using some sort of bread, some sort of a cheese, and some sort of butter or fat to grease up your “grill” then you should be good to go!

I love making fancy grilled cheeses – like caprese grilled cheese with fresh tomatoes, basil and mozzarella. Or pesto grilled cheeses with, you guessed it, pesto. Or even this Camembert and Peach Toast with Balsamic Glaze can be made into a grilled cheese!

But of course, there is something super special about your good ol’ traditional grilled cheese – comforting and classic, food for the soul.

I personally like to use a combination of American cheese and provolone cheese. Now when I say American – I don’t mean Kraft American singles that are orange and individually wrapped. I’m talking deli-sliced, fresh American cheese. It is so creamy and delicious – and of course, the OG when it comes to a grilled cheese.

Provolone is also fab because of its texture. When melted it becomes amazingly stretchy and its obviously delicious. The flavor is a bit more mild, so your sandwich will be perfectly balanced .

As for the bread – the choice is yours! But, I personally am OBSESSED with this new Hawaiian bread I found at Kroger. It looks like white bread – but it tastes like King’s Island Hawaiian Rolls. Guy – with the cheese, omgggggggg – it is amazing. You must try!

If you don’t love the sweet flavor of Hawaiian bread (I know it sounds kind of strange but promise its good!) – sourdough is another great choice! 

But – as I always like to say – you do you! Any cheese, any bread – get out that grilling pan and butter up!

The mayonnaise however is a sneaky trick that I learned! I honestly am uncertain what it does – it definitely doesn’t make your sandwich taste like mayo. But it tastes like perfection. 

And of course, if you are feeling fancy – dress it up! Add some ham, tomatoes, pesto – but most importantly, ENJOY!

Ingredients
  • 1-2 tbsp butter softened
  • 1 tsp mayonnaise
  • 2 slices bread I like Hawaiian or sourdough
  • 2 slices provolone cheese deli-sliced
  • 1-2 slices american cheese deli-sliced
Instructions
  1. In a small bowl, cream butter and mayonnaise (I like to use olive oil based butter and olive oil based mayo - both spread more easily then their traditional counterparts!).

  2. Spread butter/mayo mixture onto both sides of both pieces of bread.

  3. Heat a large pan over low-medium, add bread to pan. Cook on first side for ~2-3 minutes or until bread begins to crisp and brown.

  4. Flip bread slices over - layer both browned sides of bread with cheese (alternating provolone and American. Cover and cook for ~1-2 minutes or until cheese begins to melt. 

  5. Uncover pan, sandwich bread together and allow to cook for an additional minute on each side - or until sandwich has reached desired crispness. Enjoy with a warm bowl of Healthy Tomato Bisque (or if you are me - ketchup).
