Fiber-full bran muffins, loaded with banana, cinnamon and nutmeg. Healthy yet flavorful, these Healthy Banana Bran Muffins are sure to please the crowds, and your tummy!
Preheat oven to 350F. Lightly grease a 12-muffin pan, set aside.
In a large bowl combine, cereal, eggs, banana, almond milk and honey - stir to combine. Allow to soak at least 3-4 minutes before adding dry ingredients.
In a small bowl, combine remaining ingredients.
Once wet ingredients have soaked, add dry ingredients to wet, stir to combine.
Spoon batter evenly into greased muffin pan (each muffin cup should be about 2/3 full). Bake at 350F for 22 minutes, or until tops begin to brown and an inserted wooden toothpick comes out clean.
Allow muffins to cool completely in pan - use a knife to remove carefully. Serve with peanut butter, ghee, butter or cream cheese.
Storage: Line a plastic container with paper towels, then place muffins inside (this will help to absorb excess moisture from the muffins). Keep container slightly ajar to allow airflow.
