  • 2 cans black beans rinsed
  • 1 can corn rinsed
  • 1 red pepper diced
  • 1/2 red onon diced
  • 1 tbsp cumin
  • 1/2 tsp cayenne pepper
  • 2 tbsp olive oil
  • 3-4 tbsp lime juice or to taste
  • salt and pepper to taste
  1. In a large bowl, combine all ingredients. Stir gently to evenly distribute seasoning throughout salad.

Storage: Refrigerate bean salad in an airtight container for 3-4 days.
