So if you missed my two most recent salad recipes, you may have missed my INCREDIBLE new toasted sesame seed dressing. But, no fear – you have another chance to see it! This Apple Cranberry Gorgonzola Salad is a combination of a few of my other recipes.
All you need are a few important ingredients! Fresh spinach (or any other fresh green that you enjoy), crisp apple, tart dried cranberries, creamy gorgonzola, and crunchy almond slices – you can toss with any dressing that you’d like, balsamic or red wine vinagrette are delicious, or you can try my new FAVE dressing – Toasted Sesame Seed!
Each bite is delicious and loaded with flavor. The apples are fresh and juicy. The cranberries tart and a great contrast. The gorgonzola, creamy and delicious, as always.
For some additional protein, add a few extra almond slices! Or top with sliced chicken, turkey, or tofu!
For a little something different, you can also try adding a grain such as bulgar or farro. These grains will provide great texture and whole grains to give you energy!
Like all my recipes though, each ingredient is totally optional. Not into apples? Swap for another fruit! Don’t like almonds? Try walnuts or pecans! Don’t like spinach? Go for some mixed greens!
Apple Cranberry Gorgonzola Salad might be a mouthful to say but it is a mouthful of delicious flavor as well! I just know you are going to love it.
Fresh spinach, crisp apple, tart dried cranberries, creamy gorgonzola, and crunchy almond slices all tossed with my new FAVE dressing - Toasted Sesame Seed!
- 16 oz spinach fresh
- 1 apple diced (I like Honeycrisp or Gala)
- 1/2 cup dried cranberries
- 1/2 cup sliced almonds
- 4 oz gorgonzola cheese
- 1/4 cup white wine vinegar
- 2 tbsp apple cider vinegar
- 3 tbsp sugar
- 3 tbsp honey
- 1 tbsp minced shallot
- 2 tbsp sesame seeds
In a large bowl, toss spinach, apple, dried cranberries, almonds, and gorgonzola.
In a small bowl or jar, whisk together vinegars and sugar until sugar has dissolved. Add olive oil honey, shallot, and sesame seeds - whisk until well blended.
Pour dressing over salad, toss to combine. Serve immediately.
Storage: Store dressing in an airtight container separate from other salad ingredients. Toss immediately before serving. Dressing will stay for up to 1 week. Salad will stay for ~1-2 days.
