Ingredients
For the Oatmeal
  • 3 cups rolled oats
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp ginger
  • 1 tsp baking powder
  • 1/2 cup chopped pecans
  • 1/2 tsp salt
  • 1 can pumpkin
  • 2 eggs
  • 1 1/4 cups almond milk
  • 1/2 cup maple syrup or honey
  • 1 tbsp vanilla extract
For the Topping
  • 2 tbsp melted ghee or butter
  • 1/2 cup chopped pecans
  • 1 tsp cinnamon
Instructions
  1. Preheat oven to 350F. Lightly grease an 8 x 8 pyrex pan, set aside.

  2. Combine all wet oatmeal ingredients - whisk until smooth.

  3. Combine all dry oatmeal ingredients and blend.

  4. Pour wet ingredients into dry ingredients and blend until fully combined.

  5. Pour mixture into greased dish. 

  6. in a small bowl, combine melted ghee, pecans, and cinnamon - spread over baked oatmeal.

  7. Bake at 350F for 45 minutes, or until an inserted wooden toothpick comes out clean.

Recipe Notes

Storage: Refrigerate in an airtight container for 2-3 days. Freeze for up to 1 week.
