Think healthy has to mean boring? Absolutely not! This Roasted Parmesan Garlic Asparagus is quick, easy and delicious. A perfect side dish for one or more!
Preheat oven to 425F. Lightly grease baking sheet, or cover in aluminum foil, set aside.
In a small bowl, combine oil, garlic, salt, and pepper.
Arrange asparagus spears on baking sheet - use a pastry brush to brush on oil/garlic mixture.
Bake at 425F for 15 minutes. Remove asparagus from oven - flip asparagus spears then sprinkle with parmesan. Bake at 425F for an additional 5-7 minutes, or until cheese begins to brown. Serve immediately.
Storage: Refrigerate in an airtight container for 3-4 days. Best enjoyed right away.
