Think healthy has to mean boring? Absolutely not! This Roasted Parmesan Garlic Asparagus is quick, easy and delicious. A perfect side dish for one or more!

Ingredients
  • 1 bunch asparagus rinsed and trimmed
  • 1-2 tbsp olive oil
  • 2-3 cloves minced garlic cloves 2 large or 3 small
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded parmesan cheese
Instructions
  1. Preheat oven to 425F. Lightly grease baking sheet, or cover in aluminum foil, set aside.

  2. In a small bowl, combine oil, garlic, salt, and pepper.

  3. Arrange asparagus spears on baking sheet - use a pastry brush to brush on oil/garlic mixture.

  4. Bake at 425F for 15 minutes. Remove asparagus from oven - flip asparagus spears then sprinkle with parmesan. Bake at 425F for an additional 5-7 minutes, or until cheese begins to brown. Serve immediately.

Recipe Notes

Storage: Refrigerate in an airtight container for 3-4 days. Best enjoyed right away.
